It’s 5 pm and I am enjoying my zesty chicken cheese bread with a cup of chai. During Tea-time in Pakistan, it’s very common to be served chicken bread with tea. I think it’s perfect for tea-time because the bread is packed with flavor and protein. I remember rushing to bakeries and grabbing chicken cheese bread. Unfortunately, I have not found a bakery in the USA that makes halal chicken bread/buns.
As we approach the holiday season, this bread will be the dinner table favorite. It’s packed with protein and flavor. Gives the perfect comforting warm food taste with soft tender bread and spicy chicken filling inside!
Recipe
For the dough recipe, I used In the Kitchen with Matt‘s recipe, but I changed the sugar content to only ¼ teaspoon and added one 1 tablespoon of milk in the dough. Remember, you need to make the dough soft not sweet because the taste of chicken bread/buns should be crispy and savory.
Ingredients for Chicken Filling
1 chicken breast
2 tablespoons of your favorite tomato sauce
2 tablespoon of hot sauce/ spicy flavor sauce (optional only if you want the extra spicy and tangy taste)
Red chili powder to taste
1 tablespoon (red crush pepper or to taste)
½ teaspoon of black pepper (depending on your preference)
½ cup of shredded mozzarella cheese
½ medium onion chopped
2 tablespoons of coriander
Salt of taste
3 tablespoons of flour
¼ cup of milk
2 tablespoons of melted butter or oil (butter will make it taste more creamer)
1 teaspoon of nigella and sesame seeds
1 egg at room temperature
Cooking the filling
- Boil the chicken with salt, red crushed pepper, and black pepper powder,
- Shred the chicken and keep it aside.
- In a pan, add butter & oil, let heat on low to medium heat,
- add the cut onion and fry until translucent
- Add all-purpose flour and sauté until its color changes
- Remove from heat, add milk, mix continuously to avoid any lumps forming.
- Reheat the pan and add black pepper, red crush pepper, salt, and red chili powder,
- Add boiled and shredded chicken, green coriander, and mix well
Now, here is the million-dollar trick: either you can let the filling cool and add the chicken to the dough or you can mix in the food processor to create the perfect minced blend.
*I recommend minced if you are going to layer the bread more with cheese! If you want more creamy chicken bread, then keep the filling as it is and assemble it for baking
Assembling Process
- Roll out the dough into a rectangular shape with the help of a rolling pin.
- Place the filling in the center of the dough
- Add your cheese
- Make it into the desired shape (be creative )
Baking
Put the dough in a baking tray, apply egg-wash, sprinkle nigella and sesame seeds then bake in a preheated oven at 350C for about 30-35 minutes.
Slice the bread and serve it hot to your guest! Eat within the same day. You can reheat the bread slice for 15-20 seconds
