Meatless Monday Recipes!

My-3-Bean Pasta:  Everyone enjoys pasta because it’s quick and easy to make. Why not be creativity and zestyness to your pasta as well?  Last Fall, I invented my three-bean pasta for my Meatless Monday’s and vegetarian days  recipes! The three bean pasta is protein filled with unique spices that creates one of kind taste!   Serving (4-6 people)

  • 1 Can of organic mix beans- (I used Aldi’s organic beans)
  • 1 teaspoon: black mustard seeds, cumin seeds, and red crush pepper
  • 1-2 Table spoon of olive oil
  • Salt to taste
  • 1 1/2 teaspoon of black pepper and crush basil leaves
  • 4 green onions
  • 1 cup of Spinach leaves
  • 2 large tomatoes
  • 1 bag of pasta[ you can use any type]
  • Cheese-if need otherwise can be made vegan
  • Add 1-2 teaspoon of hot sauce[Optional for taste]

 Now let’s get to work……

  1.  In pot, bowl pasta:20-30 mins
  2. Cut green onions and Tomatoes
  3. Drain the beans out and wash them throughly
  4. Create the pasta sauce by mixing: cumin seeds, black mustards seeds,  red crush pepper, salt, black pepper, hot sauce, and olive oil in separate bowl  with the three beans
  5. Drain the pasta
  6. mix the beans, the chopped onions, tomatoes, spinach, and the pasta together in pot on low heat for 5 minutes
  7. Sprinkle some cheese
  8. Pasta is Ready 🙂
